STUDY ON L-ASPARAGINASE ENZYME PRODUCED BY STREPTOMYVCES SP ISOLATED FROM WESTERNGHATS

L-Asparaginase is an enzyme that is used as a medication and in food industry. It has been proved to be efficient in treatment of Acute lymphoblastic leukemia and Lymphosarcomas. The use of L-Asparaginase in food industries is to reduce acrylamide levels in cooked food. Microbial fermentation is an alternative source for production of L-Asparaginase enzyme due to its low cost, easy culturing techniques as well as efficient purification. The aim of the present study is to screen Actinomycetes possessing extracellular L-Asparaginase production capacity. In addition, optimization of cultural and environmental conditions required for enzyme production will be carried out for the highest L-Asparaginase producer in submerged and solid state fermentation.
